1. Dual wattage control.

The one and two drawe r, 120V warm ers are provide d with a HIGH/LOW power switch .

Use the HIGH positi on at 1000 watts for meat s, potatoe s, and vegetabl es — use the LOW

posit ion at 500 watts for breads and rolls .

thermometer to make certain all food produ cts are at an internal temperature ran ge of 140° to 160°F (60° to 71°C). All food not within the proper temperature ran ge should be heated before putting into the drawer warmer.

2.Prehea t at 200°F (93°C) for 30 minu tes.

3.Load the drawer war mer with pans of hot food only .

4.Res et the ther mostat to 160°F (71°C).

Check to make certain the drawer is securely closed, and reset the ther mostat to 160°F (71°C).

THIS WILL NOT NECESSARILY BE THE FINAL SETTING.

The proper temperature range for the foo d being held will depend on the type and quant ity of product. When holding food for prolonged periods, it is advisable to periodically check the internal temperature of each item to assure maintenance of the proper temperat ure ran ge.
