MINI BRAN AND HONEY MUFFINS
Makes approx 36 mini muffins
2 eggs
½ cup/125ml oil
¾ cup/175ml buttermilk
1 teaspoon vanilla essence
2 tablespoons honey
1 ½ cups unprocessed wheat bran ½ cup/100g brown sugar
1 tablespoon baking powder
1 cup chopped pitted dates ¾ cup chopped walnuts

2.Assemble mixer using scraper beater.
3.Using Beating/Creaming setting, mix eggs, oil, buttermilk, vanilla and honey until smooth and creamy, about
1 minute.
4.Mix bran, brown sugar and baking powder together until well combined.
5.Using Folding/Kneading setting, add bran mixture, dates and walnuts, mix until just combined, about 30 seconds.
6.Spoon mixture evenly between mini muffin pans.
7.Bake for 18- 20 minutes or until golden brown and cooked through.
PEPITA AND SESAME SQUARES
Makes approx 16 squares
1 cup / 150g wholemeal plain flour½ cup pepitas
¼cup sunflower seeds ½ cup desiccated coconut
¼cup sesame seeds
½ cup honey
175g butter or margarine, softened

2.Mix wholemeal flour, pepitas, sunflower seeds, coconut and sesame seeds together until well combined.
3.Assemble mixer using scraperbeater.
4.Using Beating/Creaming setting, mix honey, butter and egg until smooth and creamy, about 1 minute.
5.Using Folding/Kneading setting, add seed mixture, mix until well combined, about 1 minute.
6.Press mixture firmly into prepared baking pan. Bake for 40 – 45 minutes.
7.Cool in pan and cut into squares.
