Ginger Glazed Carrots
A great recipe for getting kids of all ages to eat their vegetables!
2ounces fresh ginger
3pounds carrots
3tablespoons unsalted butter
¾teaspoon kosher salt
¼teaspoon freshly ground pepper
½cup pure maple syrup
1tablespoon orange zest
Makes 6 cups, twelve
Approximate preparation time: 30 minutes
Insert the small metal chopping blade into the small work bowl of the Cuisinart® Food Processor and process the ginger; remove work bowl and reserve. Insert the slicing disc, adjusted to 5mm, into the large work bowl and slice the carrots. Melt the butter in a large skillet placed over medium heat. Once butter is melted, add the ginger and sauté until soft, about 4 minutes. Add the carrots, salt, pepper, syrup and zest.
