The purpose of the holdi ng cabinet is to maint ain

 

hot food at prope r servi ng temp eratu res. Only

 

hot food shou ld be placed into the cab inet.

 

Before load ing the unit wit h food, use a food

 

thermome ter to make certa in all food product s

 

are at an inte rnal temperat ure range of 140° to

 

160 °F (60° to 71° C). All food not within the

 

prope r tempera ture ran ge shoul d be heated

 

before loadin g int o the holdi ng cabinet.

Check to make certain the cabinet

door is

 

sec urely close d, and rotate the control kno b to

 

160 °F (71°C) .
