MA NU AL C ONT ROL OPERAT ION

1.	PREHEAT AT 200°F (93°C) FOR 30
	Push power switc h to “ON” position. The pow er
	MIN UTES BEFORE L ADING		FOO D.
	button will illumi nate.
2.	Rotate the cont rol knob to 200°F (93°C).			Digital
	The Set temperature will appear in the
	Displ ay S200 and the temperat ure disp lay lig ht
	wil l illuminate. Press the Temperature Display
	Butto n at any time to display the		Actu al inside
	air tempe ratu re	A19 0 .
3.	When the inside air tem perature reache s the
	desi red holdin g temperat ure, the tempe rat ure
	disp lay ligh t will	turn off.
4. Load the cabinet with hot food only.
	The purpose of the holdi ng cabinet is to maint ain
	hot food at prope r servi ng temp eratu res. Only
	hot food shou ld be placed into the cab inet.
	Before load ing the unit wit h food, use a food
	thermome ter to make certa in all food product s
	are at an inte rnal temperat ure range of 140° to
	160 °F (60° to 71° C). All food not within the
	prope r tempera ture ran ge shoul d be heated
	before loadin g int o the holdi ng cabinet.
5.	Check to make certain the cabinet		door is
	sec urely close d, and rotate the control kno b to
	160 °F (71°C) .

The prop er temperatu re range for the foo d being hel d will depe nd on the type and quantity of product . Whether or not the doo r vents sho uld be

open or closed will also depend on the type of food bei ng hel d. When holding foo d for prolonge d peri ods, it is advisable to perio dically check the inter nal tem pera ture of each item to assu re maintena nce of the proper temper ature range. Reset the hol ding tem peratu re acc ordin gly.
