5.1Verificaciones y servicios del mantenimiento preventivo de la freidora (cont.)

Limpie las piezas y accesorios desprendibles

De la misma manera que con la olla de la freidora, se acumulará un depósito de aceite o manteca carbonizado en las piezas desprendibles tales como cestas, bandejas de sedimentos o platos de pescado

Limpie todas las piezas y accesorios desprendibles con un paño limpio humedecido en una solución de detergente. Enjuague y seque completamente cada pieza.

Verifique la calibración del termostato o de la perilla del Control de temperatura del controlador de estado sólido (Análogo).

[NOTA: Esta verificación se aplica solamente a las unidades equipadas con termostato o controladores de estado sólido (Análogo)].

1.Asegúrese que la olla de la freidora esté llena con aceite o manteca líquida para cocinar.

2.Fije la perilla del control de temperatura en la temperatura para freír.

3.Deje que el quemador realice su ciclo de encendido y apagado automático tres veces para que la temperatura del aceite o manteca para cocinar quede uniforme. Si es necesario, revuelva para lograr que se derrita toda la manteca en el fondo de la olla de la freidora.

4.Ingrese una sonda de termómetro o pirómetro de buena calidad en el aceite o manteca, con el extremo tocando el sensor de temperatura de la freidora.

5.Cuando el quemador se encienda por cuarta vez, la lectura del termómetro o pirómetro debe estar ± 2ºC (5ºF) dentro del ajuste de la perilla de la temperatura. De lo contrario, calibre de la siguiente manera:

a.Suelte el tornillo prisionero de la perilla del control de temperatura hasta que ésta gire libremente en su eje.

b.Gire la perilla hasta que la línea de la perilla esté alineada con la marca que corresponda a la lectura del termómetro o pirómetro.

c.Sostenga la perilla y apriete el tornillo prisionero.

d.Vuelva a verificar la lectura del termómetro o pirómetro contra el ajuste de la perilla de control de la temperatura la próxima vez que se encienda el quemador.

e.Repita los pasos 4.a al 4.d hasta que la lectura del termómetro o pirómetro y el ajuste de la perilla estén dentro de ± 2°C (5ºF).

Si no se puede calibrar, pida servicio a un Centro de servicio autorizado de fábrica.
