Chocolate Dessert Waffles

1 cup (250 ml) flour

2 tablespoons (30 ml) brown sugar, packed

2 teaspoons (10 ml) baking powder

1/4 teaspoon (1.3 ml) salt

112 teaspoons (7.5 ml) cinnamon

In a small bowl, whisk together the flour, sugar, baking

1/4 cup (60 ml) vegetable shortening

1/2 cup (125 ml) sugar 1 egg

1/2 teaspoon (2.5 ml) vanilla 2/3 cup (150 ml) flour

3 tablespoons (45 ml) unsweetened baking cocoa

1 teaspoon (5 ml) baking powder

Pinch of salt (1/16 teaspoon [0.3 ml])

1/2 cup (125 ml) milk

powder, salt, and cinnamon. In a large bowl, whisk together the egg, milk, and oil. Add the flour mixture to the milk mixture. Stir until the batter is just combined. Stir in the raisins. Pour one pre-measured scoop of batter onto the waffle maker. Cook 6 to 8 minutes or until golden brown.

Makes 4 to 6 waffles.

Crispy Ginger Ale Waffles

2 cups (500 ml) baking mix (for example, Bisquick)

2 tablespoons (30 ml) oil

112 cups (375 ml) ginger ale

Whisk together baking mix, oil, and ginger ale. Let sit 5 minutes. Pour one pre-measured scoop into waffle maker. Bake 6 minutes. Makes 4 waffles.

In a small mixing bowl, cream shortening and sugar until well blended. Add egg and vanilla; blend until smooth. Add remaining ingredients and mix until well blended. Batter will be thicker than normal waffle batter. Spray grids with nonstick cooking spray. Pour one pre-measured scoop of batter into the middle of the waffle maker. Close lid and cook 6 to 7 minutes. Remove and serve topped with vanilla ice cream.

Makes 3 to 4 waffles.
