3.2WEEKLY FRYER CLEANING (BOIL OUT)

The fryer shouldbe thoroughlycleanedoncea week. This cleaningshouldincludea complete drainingof thefryer anda boil out. This would alsobea goodtinle to replacethefilter paperif

necessary.

a.You will needa containerlargeenoughto hold thevolumeof thetank. Thiscontainer shouldalsobeableto withstandboiling watertemperatures.

Completely shut down the fryer when the oil is to be replacedby water, and when the heating portion of the cleaningis complete. This will prevent the heating system from coming on during the oil draining and water filling

procedure.

b.Drain the oil from thefryer and discardor savefor reuse. Removetube rack/meshtube screensand removeanylarge debris from thebottom of thefry tank. Once clean,return tube rack/mesh screensto the fry tank. Cose the drain valve andfill the fry tank with water and noncausticdetergent. For bestresults usePita> Fryer Cleaner.

c.Restartyourfryer asdescribedin 2.3andsetthethermostatto 200°Fandbring the water

to a slow boil. DO NOT allow water to boil becauseexcessiveJ will occur.Once thewateris at a slowboil turn off thefryer.

d.Allow thefryer to soakfor 20minutes to softenshorteningdepositsandcarbon. Usefryer brush to remove any residuefrom tank, beatingtubes,andsidewalls. Perform the daily cleaning proceduredescribedin section2.5.

e.Removethe filter unit from under thefryer. Slide acontainerto catchthewater underthe fryer so that the pipe that is nonnally aimedinto the filter pan is aimedinto thecontainer and open the drain valve.

f.Drain thehot waterto theoontainerandrinsethetankwith cleanwarmwater.

g.Wipethetank dry with cleancloth wipes. Closethedrainvalveandremovethelarge

h.Referto section2.1to refill thefryer.

3.3FLUE INSPECI'lON

It is recommendedthat once every six months, with thecooker cooled down, you examinethe flue area.Checkfor corrosion or blockageof the flue. Ensurethat thecookeris shutdownanddo not turn it on during the examination. Examination of the flue areaduring cooking may causebodily injury.
