VENT ILATION REQUIREMENTS

A ste am ventilation hood is mandato ry for the operation of the oven. The ventilat ion hood must be insta lled in accordance with local building codes for the stea m exha ust and must protrude 12-inc hes to 20-inch es (300 to 500mm) over the front side of the oven. A grease filter must be loc ated in the protru ding area of the hood. Grease filters sho uld be thor oughl y cleaned on a regu lar basis following manufactu rer's inst ructi on. Ventilation hoods mus t ensure an adeq uate amount of incom ing air dur ing operation and must be operated whenev er the com bination oven/ste amer is used in order to avoid the accu mulation of conde nsa tion in the hood area.
