3-17. REGULAR MAINTENANCE As in all food service equipment, the Henny Penny open fryer requires care and proper maintenance. The table below provides a summary of scheduled maintenance procedures to be performed by the operator.

If moving fryer to perform preventive maintenance:

• Gas supply should be turned off to avoid fire or explosion.

• Electrical supply should be unplugged or wall circuit breaker turned off to avoid electrical shock.
