NOTE: The New Zealand
tablespoon is 5m l less than the
Australian table spoon, so care
should be taken when meas uring
ingredients to comp ensate for
the variance.
For example: 1 Austra lian
tablespoon = 1 New Zeal and
tablespoon + 1 New Zeal and
teaspoon.
It is also impor tant to note that
some New Zealand ingre dients,
especially flour a nd yeast, can
differ from Austra lian equivalents.
Metric Weighing Scales
For consistent result s it is
recommended that a set of metri c
weighing scales be u sed to weigh
larger quantities a s they provide
greater accuracy than mea suring
cups. Tare (zero) the scales with the
container in positio n then spoon or
pour ingredients in u ntil the desired
weight is achieved.
NOTE: In general, water weighs
the same in grams as i t measures
in millilitres.

If using graduated metr ic measuring
cups, it is impor tant to spoon the dry
ingredients loosel y into the required
cup. Do not tap the cup on the
bench or pack the ingred ients into
the cup unless other wise directed.
Level the top of the cup with a
knife. When using grad uated metric
measuring spoo ns, level the top of
the spoon with a straig ht edged knife
or spatula.
