1 cebolla, pelada y cortada en cuartos

1 diente de ajo

1 chile picante (tipo jalapeño o serrano), sin centro, sin semillas y cortado

en cuartos

4 tomates

1⁄4 taza (60 ml) de cilantro, apretado

1⁄2 cucharadita (2,5 ml) de comino

1 cucharada (15 ml) de jugo de lima Sal y pimienta a gusto

Salsa picante, opcional

Usando la cuchilla para picar/mezclar y con el procesador en marcha, deje caer la cebolla, los dientes de ajo y el chile picante por la tolva de alimentos y corte hasta que queden bien picados. Detenga el procesador y agregue tomates, cilantro, comi- no, jugo de lima, sal y pimienta. Pulse hasta obtener la textura deseada. Agregue salsa picante si así lo desea. Se obtienen entre 2 a 3 tazas (500 a 750 ml).

Ensalada de pepino

4 pepinos medianos, sin pelar

3 cucharaditas (15 ml) de sal, dividida

1⁄2 taza (125 ml) de vinagre blanco

1⁄4 taza (60 ml) de azúcar

1 cucharada (15 ml) de eneldo

1⁄4 cucharadita (1,25 ml) de pimienta blanca

1 diente de ajo

Rebane los pepinos en la boca grande del procesador de alimentos con el disco rebanador/rallador con el lado para rebanar hacia arriba. Espolvoree 2 cucharadi- tas (10 ml) de sal sobre los pepinos y deje reposar por una hora. Escurra. Agregue y revuelva el vinagre blanco, azúcar, eneldo, pimienta blanca y ajo. Refrigere por 3 horas antes de servir. Rinde 8 porciones.
