SALMON WITH CITRUS MARINADE WITH COCONUT RICE
For a specialdinner, the fishand rice are cooked togethersimultaneously.

cupsjasminerice 1can unsweetenedcoconutmilk
2tbsp. water pinchsalt
Cookingspray 2salmon steaks,approximately6 ozs.

orange,zestedand juiced
1/2
lemon,zestedand juiced
2inch freshginger root,peeled and grated 1tbsp.soy sauce
saltto taste

Placerice, coconut milk, waterand rice into INNER POT.Spray
STEAMERBASKET with cookingspray and arrange salmon.

In a separatebowl, combine orangezest and juice, lemonzest and
juice,ginger, and soy sauce.Brush both sides of salmon.Place LID on
RiceCooker. TurnRice Cooker to "COOK" Mode.
3.
Every5 minutes, baste top of fishwith marinade. At end ofcycle, test
riceand cut into salmon to see ifopaque.

Thisis a wonderful recipe for fall.Great for adults and kids!
4large apples,peeled,cored and chopped 1/4cupcider
3tbsp. sugar 3/4tsp.cinnamon
11/2tbsp.unsaltedbutter

Add allingredients to the INNERPOT. Place LIDon Rice Cooker and
set onthe "COOK" Mode.
2.
Whencycle is complete, checkto see if apples are tender.Add
additionalcook time if needed.
3.
Pureewith hand blender or foodprocessor.
