Yellow Rice with Chicken
Place in a 3 quart casserole:
1package (5 - 8 ounces) yellow rice mix with
flavor packet
2cups chicken broth
Stir well and cover. Touch One Dish Dinners 3 times
and touch Start/Touch On.
At pause, stir well and add:
1cup frozen peas
1red pepper, diced
11/4pounds boneless chicken cutlets, sliced into
thin strips
Recover. Touch Start/Touch On.
At end, garnish with parsley.
2. CHICKEN DINNERChicken with Fruited Stuffing
Place in a 3 quart casserole:
1package (6 ounces) cornbread or apple and
raisin stuffing mix with flavor packet
1cup apple juice
11/2cups chicken broth
3tablespoons butter, cut into cubes
2apples, peeled, cored and cut into cubes
1/3cup raisins
Stir well and cover. Touch One Dish Dinners 3 times
and touch Start/Touch On.
At pause, stir well and add:
3cups string beans, cut into 1-inch pieces
11/4pounds boneless chicken cutlets, sliced into
thin strips
Recover. Touch Start/Touch On.
At end, garnish with toasted slivered almonds.
Sweet and Sour Pork with Rice
Place in a 3 quart casserole:
1cup rice
2cups pineapple juice
1/4cup apricot/peach sauce, sweet and sour sauce
or duck sauce
2tablespoons soy sauce
1tablespoon fresh ginger, minced
Stir well and cover. Touch One Dish Dinners 4 times
and touch Start/Touch On.
At pause, stir well and add:
1/4cup honey
11/4pounds boneless, lean, pork loin, cut into thin
strips
1can (20 ounces) pineapple cubes, drained
3cups fresh or frozen stir-fry vegetables (pea pods,
celery, water chestnuts, carrots, peppers, etc.)
Recover. Touch Start/Touch On.
At end, garnish with toasted almonds.
3. BEEF OR PORK DINNERBeef with Broccoli and Rice
Place in a 3 quart casserole:
1cup white rice
3tablespoons Teriyaki sauce
1tablespoon Hoisin sauce
21/2cups beef broth
Stir well and cover. Touch One Dish Dinners 4 times
and touch Start/Touch On.
At pause, stir well and add:
11/4pounds beef top round, sliced thin against the
grain (1/4” thick)
4scallions, diced
4cups broccoli florets
1large onion, sliced very thinly
Recover. Touch Start/Touch On.
Creamy Seafood Pasta
Place in a 3 quart casserole:
8 - 9 ounces fresh tortellini
2cups water
Stir well and cover. Touch One Dish Dinners 5 times
and touch Start/Touch On.
At pause, stir well and add:
1jar (17 ounces) creamy Alfredo sauce or 13/4
cups of medium, white cheese sauce
11/4pounds combination raw shellfish, fresh or
thawed (shrimp, bay scallops, crabmeat)
3cups mixed, fresh vegetables (sliced
mushrooms, thinly julienned carrots, green
beans)
Recover. Touch Start/Touch On.
At end, garnish with:
1/3cup grated Parmesan cheese
4. SEAFOOD DINNERGreek Fusilli with Eggplant and Shrimp
Place in a 3 quart casserole:
2cloves garlic, minced
1large onion, thinly sliced
1jar (28 ounces) marinara sauce
1cup water or dry white wine
2cups (6 ounces) tricolor pasta
1medium eggplant (approximately one pound),
peeled and cut into large cubes
Stir well and cover. Touch One Dish Dinners 5 times
and touch Start/Touch On.
At pause, stir well and add:
11/4pounds raw shrimp (fresh or thawed), peeled
and deveined
Recover. Touch Start/Touch On.
At end, top with:
3/4 -1 cup crumbled feta cheese
