If a defective probe is suspec ted, measure the temperatu re of the oil / sho rtening with a thermometer. Compare the thermome ter reading wi th the tempera ture sho wn in the co ntrol to make certain the readings are reasonably close. If there is a wide discrepancy, perfo rm a co mplete f ryer s tation shutdown and contac t Alto-Shaam service.
