CARBONADE FLAMANDE - Slow cooking

Pour 10 à 12 pers.

Préparation : 10 min

Cuisson : 8 heures

Ingrédients : 3 kg de bœuf à ragoût désossé, coupé en cubes, 1 bou- teille (12 oz) de bière brune, 1 cuillère à soupe de fécule de maïs, 2 cuillères à soupe de sauce soja ou 2 cuillères à café de sel, 1/2 cuillère

àcafé de poivre noir moulu, 1 gousse d’ail émincée, 1 tasse d’oignons émincés, 1/2 tasse de cassonade, bien tassée.

Versez la bière dans la cuve et ajoutez la fécule de maïs en fouettant. Ajoutez le reste des ingrédients et mélangez. Fermez le couvercle et fai- tes mijoter pendant 8 heures.

Variante : Ajoutez 200 g de petits oignons au vinaigre avant de servir.

Suggestion de présentation : Disposez le ragoût dans un grand plat et décorez de pommes de terre persillées.

TAJINE D’AGNEAU - Slow cooking

Pour 6 pers.

Préparation : 10 min

Cuisson : 4 heures

Ingrédients : 1 kg d’épaule d’agneau coupée en cubes, 2 oignons moyens émincés, 3 cuillères à soupe de miel, 1 cuillère à soupe de jus de citron, 1 bâton de cannelle, 1 cuillère à café de curcuma , 2 gous- ses d’ail émincés, 1 cuillère à café de sel, 80 g d’abricots secs coupés en deux, 30 g d’amandes concassées.

Versez les ingrédients dans la cuve et mélangez. Fermez le couvercle et faites mijoter pendant 4 heures.

Variante : Ajoutez une petite pincée de safran.

Suggestion de présentation : servez avec du riz arborio.
