CALMARS ÉPICÉS SEL & POIVRE

INGRÉDIENTS

15 petits piments séchés, hachés grossièrement

13 tasse de sel de mer

3 c. à soupe de grains de poivre Sichuan

2 c. à soupe de grains de poivre blanc

3 tasses de farine de riz (ou farine ordinaire ou de maïs)

1½ kg (3 lb) de calmars moyens, nettoyés et pelés 3 blancs d'oeufs

Piment rouge émincé, quartiers de lime et coriandre pour servir

MARCHE À SUIVRE

1.Mettre les piments, le sel de mer et les grains de poivre dans une grande poêle à frire et chauffer à feu moyen 5 min ou jusqu'à ce que les épices soient odorantes et crépitantes.

2.Broyer les épices dans un moulin à épices, un pilon ou un mortier jusqu'à ce que finement moulues. Mettre la farine et les épices dans un grand sac à fermoir, bien mélanger et réserver.

3.Nettoyer les calmars en enlevant les viscères et couper les pattes. Enlever la peau du tube et l'ouvrir pour y exposer la chair. Bien laver et sécher avec du papier essuie-tout.

4.Tracer un motif entrecroisé à l'intérieur du calmar et couper des lanières ou des carrés.

5.Remplir la friteuse de 4 litres d'huile et régler à CALAMARI/FRESH.

6.Tremper une petite quantité de calmars dans les blancs d'oeufs et enrober du mélange de farine.

7.Secouer l'excédent de farine et déposer dans le panier à friture. Abaisser le panier et presser le bouton TIMER (minuterie).

8.Égoutter sur du papier essuie-tout et répéter avec le reste des calmars, les blancs d'oeufs et la farine.

Servir chaud, accompagné de piment rouge tranché, de quartiers de lime et de tiges de coriandre fraîche.
