Warm Mixed Berry Compote with Vanilla Ice Cream and Toasted Pecans

3 cups (750 ml) frozen mixed berries, thawed OR a mixture of fresh berries such as raspberries, strawberries or blackberries

12 cup (125 ml) water

14 cup (60 ml) granulated sugar

3 pieces citrus zest, orange or lemon 14 teaspoon (1.25 ml) cinnamon

14 teaspoon (1.25 ml) freshly grated nutmeg 34 cup (175 ml) pecan halves

Vanilla ice cream

Fresh mint leaves for garnish

Heat oven to 350ºF (176ºC). Spread pecan halves on baking sheet and toast in heated oven in 3 minute increments, stirring occasionally, until nicely browned. Set aside to cool.

Using GladWare® bowl, place citrus zest in chopper and process until finely chopped. Set aside.

Place water and sugar in small to medium saucepan and bring to a boil. Add citrus zest and boil for a minute longer. Remove from heat.

In new GladWare® bowl, repeat chopping process above with berries in two batches, 112 cups (375 ml) each, pulsing only briefly until very lightly chopped.

Add berries, cinnamon and nutmeg to hot sugar mixture and stir until combined. Let mixture rest for 15-20 minutes until slightly cooled.

Using a new GladWare® bowl, place pecans in chopper and process until coarsely chopped.

Spoon ice cream into 4 bowls. Top with warm compote and chopped pecans and serve immediately. Store any leftover compote in GladWare® bowl in refrigerator.

Makes 4 servings.
