2 28-ounce cans crushed Italian tomatoes
1 12-ounce can of tomato paste
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 red pepper, diced
1 green pepper, seeded and diced
2 Serrano chili peppers, minced
1 long red pepper, diced
2 chipotle peppers in adobe sauce   (optional)

R E C I P E S

Signature Chili

Add corn, substitute turkey for ground beef, or omit meat as desired.

Olive oil

2 pounds hamburger

1 12-ounce can beef broth

1 teaspoon oregano

3 teaspoons chili powder

1 teaspoon cumin

5 cloves garlic

2 12-ounce cans pinto beans, drained and rinsed

2 12-ounce cans of red kidney beans,   drained and rinsed

5 dashes hot sauce

Optional garnishes:

Shredded Cheddar cheese

Chopped avocado

Sour cream

Chopped fresh cilantro

1.Set pressure cooker to browning mode and add olive oil. Crumble and brown meat; drain fat.

2.Add all other ingredients to the pressure cooker.

3.Cover and cook under pressure for 25 minutes or press program indicator for Stew Signature Chili.Optional garnishes:

Serves 3-4

Beef Bourguignon

3 pounds beef chuck, cube

1 cup mushrooms, sliced

½ cup flour

1 cup fresh parsley, minced

1 teaspoon salt

6 teaspoon minced garlic

1 teaspoon pepper

4 bay leaves

½ pound bacon, diced

2 cups red or white wine

Olive oil

1 cup beef broth

2 onions, sliced

 

1.Mix the flour, salt, and pepper. Coat beef in flour mixture.

2.Add bacon to pressure cooker and set to Browning mode Serves 3-4 .Beef Bourguignon Cook bacon, drain fat and set aside.

3.Add oil to pressure cooker and set to Browning mode Manual background .Manual background Sear beef on all sides.

4.Add remaining ingredients and bacon back to pressure cooker. Cover and cook under pressure for 25-30 minutes or press program indicator for Stew Manual backgroundManual background.Manual background
