The purpose of the holdi ng cabinet

hot food shou ld be placed into the cab inet.

 

Before

load ing the unit wit h food, use a food

 

thermome ter to make certa in all food product s

 

are at an inte rnal temperat ure range

of 140° to

 

160 °F (60° to 71° C). All food not within the

 

prope r tempera ture ran ge shoul d be heated

 

before

loadin g int o the holdi ng cabinet.

Check to make certain the cabinet

door is

 

sec urely close d, and rotate the control kno b to

 

160 °F (71°C) .

che ck the inte rnal temp era ture of each item to

 

assure

mainte nance of the proper tem perature

 

ran ge.

flash “-AC-” for 4 sec onds , then display the set holding tem perature for 4 sec onds and will alter nate unt il acknow ledged. To acknow ledge , press any key. This feature will alert you when there is a power failure, indi cating tha t food safety may be compromised.
