Thermostatcalibration requires that the temperatureof the fryer be raised aboveboiling. Therefore,you will needto drain thewater from thefryer and fill it with oil. Before removing thewater,perform the initial cleaningof the fryer. Oeaning thefryer now will preventyou from having to drain theoil and refill with water later.

Filling thefryer with oil is describedin 2.1. To performthecalibration checkdetailedbelow youwill needadigital thermometer.

b.Set the thermostatat 325°Fandwait for the temperaturereading on the thermometerto rise. As the temperaturerises toward 325°Fwatch the thermometerclosely.

c.If the shorteningtemperaturereaches350oPandthe burnersDO NOT turn off, turn the thermostatdown. Keep lowering the thermostatsetting until the burnersgo out.

d.Let the fryer cycle 4 to 6 times before checking the temperature. Compare the thermometertemperatureagainstthethermostatsetting. If thevaluesaremore than5°F apart,calibratethe thermostatusingtheappropriatecalibration procedurein this manual.
