1.5.4INITIAL CLEANING
When thefryer is shipped,manyof its partsarecoveredwith a thin coatof oil for protection. Before the fryer is ready for cooking it must be cleaned. This will remove the oil coating and any foreign matter that may have !.~JII!ulated during storageandshipment. Perform the cleaning asdescribed below.
a.Fill the tank with water and addonepacketof Pita> fryer cleaneror a mild detergent.
b.Turn the fryer on andsetthe thermostatto 200~. Allow thefryer to heatfor 15minutes.

Do not leavethefryer unattendedduring cleaning. Never let the water level go below the "OIL LEVEL" mark on the back of the tank.
c.Using thefryer cleaningbrush, scrubtheinsideof thefryer to removeprotective coating.
d.When cleaningis complete,turn off thefryer main burnersandturn gasvalve knob to the PILOT position. If thefryer haselectronicignition turn thegascontrol valve to theOFF position. Drain the water into a containersuitable for hot water and disposeof it.
e.When thetankhasoooled,rinseit thoroughlywith 0001water. Continue to rinsethetank
until the cleanerhasbeen rinsed, thoroughly from the tank.

f. Using a cleandry cloth, wipe out all of thewater. Be very thorough removing thewater, becauseany residualwater will causehot oil to splatter out of the fryer.

Mild steel tanksmust be wiped down/coatedwith oil to keep the tank from rusting.
g. Now that the tank is clean, you arereadyto fill and operatethe fryer. Refer to 2.1 for instructions on adding shortening to the fryer.
