1 bouquet de feuilles de basilic

2 jaunes d’œuf

2 gousses d’ail

1 c. à thé de moutarde sèche

2 c. à soupe de jus de citron

1 c. à soupe de vinaigre

125 g (4 oz) de noix de pin

Sel et poivre au goût

125 ml (4 oz) d’huile d’olive

125 ml (½ tasse) d’huile végétale

60 g (2 oz) de fromage parmesan râpé

 

MÉTHODE

1.Mettre tous les ingrédients dans le mélangeur.

2.Sélectionner la vitesse 2/CHOP et mélanger jusqu’à consistance onctueuse.

3.Transférer le mélange dans un bol de service. Réfrigérer jusqu’au moment de servir.

Servir accompagné de pain turc grillé.

MÉTHODE

1.Mettre les jaunes d’œuf, la moutarde, le vinaigre, le sel et le poivre dans le mélangeur.

2.Sélectionner la vitesse 1/MIX et mélanger 10 à 15 secondes jusqu’à consistance légère.

3.À la vitesse 3/BLEND, verser un filet d’huile par l’ouverture du couvercle. Mélanger jusqu’à consistance épaisse, environ 1 minute.

Variations de mayonnaise :

Aux framboises : remplacer 1 c. à soupe de vinaigre par 1 c. à soupe de vinaigre de framboise.

À l’ail : ajouter 2 gousses d’ail pelées et hachées au mélange de jaunes d’œuf.

Aux fines herbes : ajouter ½ tasse de fines herbes hachées (basilic, ciboulette, persil, thym) à la mayonnaise préparée.
