Hamburguesa Básica

1 1/2 lb. (680 g) de carne picada

1/4 cucharadita (1.3 ml) de sal, o para dar gusto 1/4 cucharadita (1.3 ml) de pimienta

4 bollos de hamburguesa

1.Combine la carne picada y la pimienta en un recipiente de mezcla mediano, haciendo la mezcla de forma suave pero completa, usando las manos. Dé a la mezcla la forma de cuatro hamburguesas, cada una de 3/4 de pulgada (1.9 cm) de grosor en el centro y en los extremos. (Incluso el grosor asegura una cocción pareja y evita que los extremos se sequen antes de haberse cocinado el centro).

2.Coloque las hamburguesas en la parrilla. Ase entre 7 y 10 minutos por lado, dando vuelta las hamburguesas una sola vez. (De acuerdo con el U.S. Department of Agriculture [Departamento de Agricultura de EE.UU.], toda la carne picada debería ser cocinada hasta por lo menos una preparación media [160°F/71°C] o hasta que el centro de la hamburguesa ya no esté rosa). Haga un pequeño corte en el centro de cada hamburguesa para controlar el nivel de cocción.

3.Tueste los bollos colocando los mismos, con el lado abierto hacia abajo, sobre los extremos de la rejilla de la parrilla durante aproximadamente 1 minuto o hasta que estén levemente dorados.

4.Retire las hamburguesas de la parrilla y sirva las mismas sobre los bollos tostados para hamburguesa.

Bistec a la Parrilla 101

2 cucharadas (30 ml) de aceite de oliva

2 bistecs de solomillo deshuesados, corte con 1 pulgada (2.5 cm) de grosor (unas 2 libras [910 g] en total) 1 diente de ajo, pisado

Sal y pimienta a gusto

1.En un recipiente pequeño, combine el aceite de oliva con el ajo. De forma generosa frote y cepille el aceite saborizado sobre ambos lados de los bistecs. Rocíe levemente los bistecs con sal y pimienta.

2.Coloque los bistecs en la parrilla. Ase entre 35 y 45 minutos hasta una cocción media, dando vuelta cada 15 minutos.

3.Retire los bistecs de la parrilla, cubra sin apretar con papel de aluminio y deje que los bistecs descansen durante unos minutos antes de deslizar apenas por el cereal. Sazone con sal y pimienta adicional (si lo desea) antes de servir.
