•Cast ironcookware heats slowly.

To achieve optimumcookingperformance, use cookpotswith fiat bottoms,tight fitting covers, and sized for the surface burner.

Flame size should be adjusted so it does not extend beyond the edge of the cookware. This instructionis based on safety considerations.Adjustingthe size of the flame to fit the size of the cookwarealso helpsto save fuel.

Cookpotswhich extend morethat twoinchesbeyondthe grateor touchtheeooktop may cause heat to build up, resultingin damage to the burner grate, burner or cooktop.

Specialityitems such as woks with a support ring, which restrictair cimulation aroundtheburnerwillcause heattobuildup and may resultin damagetothe burner grate, burner or cooktop.Use Jenn-Airfiat bottom wok accessory, Model AO142.

Aluminum cookware heats evenly and quickly. A slightly larger flame size can be used. The flame can beadjustedsoitcomestotheedge ofthecookware.However,

the flame shouldNEVER be adjustedso that it extends beyondthe bottomof the cookware.

Stainless steel cookwarewith copper or aluminum cores heat evenly and fairly quickly. The flame size shouldbe adjusted toextend only halfway between center and edge of the cookwarabottomfor best results.

Cast ironcookware heats slowly.

Checkmanufacturer'srecommendationsbefore usingporcelainon steel,poree[ain on cast iron, glass, glass/ceramic,earthenware, or other glazed cookpots.

If the cookware is covered, less fuel will be needed; therefore, a lower flame size can be used.Note: Foodwillnotceokanyfasterwhenmorethantheamountofheatnaeded to maintain a gentle boil is used.

Acceptable water-bath or pressurecanners shouldnot be oversizedand should have a flat bottom. The followingare not recommended:Oversizedcannersor a

very large canner that rests on two surface burner grates.

When canning,use the Hi settingjust until the water comes to a boil or pressure is reached in the pressure canner, then reduce to the lowestflame setting that maintainsthe boil or pressure.

Prolongeduseof the Hi settingor the useof incorrectcanningutensilswill produce excessive heat. Excessive heat can cause permanent damage to the appliance.
