bottom of the mix hopper for sanitizing.

SanitizingStep 1
Prepare two gallons (7.6 liters) of an approved 100
PPM sanitizing solution (example: Kay-5r). USE
WARMWATER AND FOLLOW THE M ANUFACTUR-
ER’S SPECIFICATIONS.
Step 2
Pour the two gallons (7.6 liters) of sanit izing solution
over all the parts in the bottom of the mix hopper and
allow it to flow into the freezing cylinder.
Note: Youhave just sanitized the mix hopper and
parts; therefore, be sure your hands are sanitized
beforegoing on in these instructions.
Repeatt hese steps for the other side of the freezer on
the Model H84.
Step 3
Place the power switch in the ON position.
Step 4
Press the WASH key and allow the sanitizing solution
in the freezing cylinder to agitate for five minutes.

Step 5
With a pail beneath the door spout(s), open and close
the draw valve six times. Open the draw valve and
draw off the remaining sanitizing solution.
Note: On the Model H84, momentarily open the
center draw valve to sanitize the center door spout.
Step 6
Once the sanitizer stops flowing from the door spout,
close the draw valve and press the WASH key,
cancelling the beater motor operation.
