The AUTOMATIC mode uses both the food probes and air probe temperatures to control the cycle. When all the food temperatures have reached the final setting of 40o F, the unit will automatically go into holding mode and a beep will sound for 5 seconds. The elapsed time and food temperature readouts will blink.
