Mexican Meatball

Casserole

Makes 6to 8Servings
1lb. ground chuck
1/2 cup dry bread crumbs
1/8 teaspoon pepper
1teaspoon salt
1teaspoon chili powder
3tablespoons dry minced onions
1egg
3tablespoons ketchup
1/2 cup instant rice
1can (15% oz.) kidney beans,
undrained
1can (14%oz.) tomatoes,
chopped and undrained
1tablespoon chili powder
Inlarge mixing bowl, place meat,
bread crumbs, pepper, salt, chili
powder, onion, egg and ketchup.
Mix well and form into 18balls.
Arrange balls in 2-qt. casserole.
Set aside.
In small mixing bowl place rice,
beans, tomatoes and chili powder.
Mix well and pour in casserole
over meatballs. Cover. Microwave
on Auto Cook Code 8. Rearrange
meatballs when oven signals and
remaining time is displayed.

Makes about 80 hors d’oeuvres
1jar (10oz.) currant jelly
1jar (6 oz.) prepared mustard
2lbs. frankfurters, cut into
l-in. pieces
In 3-qt. casserole stir together jelly
and mustard until well blended.
Add frankfurters, stirring to coat
each piece. Cover. Microwave on
Auto Cook Code 1.

Chicken Teriyaki

Makes 4Servings
1/4 cup soy sauce
1/4 cup honey
1/3 cup orange juice
1whole chicken (about 3lbs.)
1tablespoon water
2tablespoons cornstarch
In small cooking bag, mix soy
sauce, honey and orange juice. Add
chicken to bag and tie with plastic
tie. Turn chicken on its side in
12 X8x2-in. dish. Marinate 1
hour on each side. Place bird breast
side up in dish. Slash bag near
closure. Microwave on Auto Cook
Code 5. When oven signals,
remove chicken and prepare
Teriyaki sauce. In l-pt. glass
measuring cup stir together water
and cornstarch. Cut off one corner
of cooking bag with scissors and
drain juices into cup. Microwave at
High (10)2minutes, stirring once.
Remove chicken from bag to serving
platter. Pour sauce over chicken
just before serving.

Classic Ham Loaf

1lb. ground cooked ham
1/2 lb. ground fresh pork
1/2 cup soft bread crumbs
1/2 cup water
2tablespoons instant minced
onion
1/4 teaspoon pepper
Mix ground ham and pork
thoroughly with crumbs, water,
onion and pepper. Mold into flat
loaf in 9-in. pie plate. Cover with
wax paper. Microwave on Auto
Cook Code 8.

Chicken and Rice

cream of mushroom soup
1-1/4 cups milk (1soup can full)
3/4 cup instant rice
1can (4 oz.) mushrooms,
stems and pieces, drained
1pkg. (1%oz.) dry onion
soup mix
1cutup chicken (about 3lbs.)
Inmixing bowl mix soup, milk, rice,
mushrooms and onion soup mix.
Arrange chicken pieces in a12 x8
x2-in. glass dish with meatiest
pieces to outside of dish. Pour soup
mixture over chicken. Cover with
wax paper. Microwave on Auto

Swiss Steak

1-1/2 lbs. round steak, 112-in.
thick, tenderized or
pounded with meat mallet
1/4 cup flour
1-1/2 teaspoons salt
1/8 teaspoon pepper
1medium onion, sliced thin
1can (16oz.) tomatoes
Cut meat in 6pieces and coat with
mixture of flour, salt and pepper.
Place in 3-qt. casserole. Cover
with onion. Break up tomatoes
with fork and pour over top. Cover.
Microwave on Auto Cook Code 7.
Rearrange meat when oven signals
