Hjemmelavede pommes frites

Sådan tilberedes de bedste og sprødeste pommes frites:

1Brug faste kartofler, og skær dem i stave. Skyl stavene i koldt vand. På den måde undgår du, at de klæber sammen under friturestegningen.

BTør kartoffelstavene omhyggeligt.

2Steg pommes fritterne i to omgange: første gang i 4-6 minutter ved en temperatur på 160cC og anden gang i 5-8 minutter ved en temperatur på 175cC.

3Læg de hjemmelavede pommes frites i en skål, og ryst dem let. Lad dem afkøle inden anden stegerunde.

Frosne madvarer

Dybfrosne pommes frites er altid forkogte, så de skal blot steges én gang i henhold til anvisningen på emballagen.

Madvarer taget direkte fra fryseren (-16 til -18cC) vil medføre en væsentlig afkøling af olien eller fedtet, når de kommes ned i olien/fedtet. Da de derfor ikke brunes med det samme, vil de absorbere for meget olie eller fedt.

Dette kan du undgå på følgende måde:

-Optø så vidt muligt frosne madvarer ved stuetemperatur, før de frituresteges, medmindre andet fremgår af emballagen.

-Ryst omhyggeligt så meget is og vand af som muligt, og dup ingredienserne, indtil de er helt tørre.

-Frituresteg ikke for store mængder ad gangen (se anbefalingerne i tabellen).

-Indstil stegetemperaturen til den temperatur, som er angivet i tabellerne sidst i denne brugsvejledning eller på emballagen til de ingredienser, som skal steges. Hvis der ikke er angivet en stegetemperatur, skal du vælge en temperatur på 190cC.

-Nedsænk maden i olien/fedtet meget forsigtigt, da frosne madvarer kan få olien/fedtet til at boble/sprøjte voldsomt.

Sådan undgås uønsket bismag:

Visse typer madvarer, især fisk, kan give olien/fedtet en ubehagelig bismag. For at forhindre dette gøres følgende:

1Opvarm olien/fedtet i frituregryden til 160cC.

2Kom derefter to tynde skiver franskbrød eller et par persillekviste op i olien/fedtet.

3Vent, indtil der ikke kommer flere bobler, og tag så franskbrød/persille op af gryden med en spatel.

Oliens/fedtets bismag er nu væk.
