Asado de cerdo a las hierbas

4 dientes grandes de ajo cortados en cuadrados 5 libras de asado de cerdo, con o sin huesos

1 cucharadita de sal

1 cucharadita de tomillo molido

1/2 cucharadita de salvia pulverizada

1/2 cucharadita de clavos de especia molidos

1 cucharadita de cáscara de limón cernida

1/2 taza de agua

3 cucharadas de maicena, optativo

3 cucharadas de agua – optativo

Tiempo de cocción: LO (baja) = 9 a 10 horas HI (alta) = 5 a 6 horas

1.Corte 16 cavidades pequeñas en el asado e introduzca los trozos de ajo. En un recipiente pequeño combine la sal, el tomillo, la salvia, los clavos de especia y la cáscara de limón. Introdúzcalos en el asado de cerdo frotándolos

2.Vierta 1/2 taza de agua en la olla cerámica. Agregue el asado. Coloque la olla cerámica en la base calentadora, tápela y cocine en el ajuste de temperatura deseado o hasta que el termómetro para carne introducido en el centro del asado indique 170°F o más.

3.Deje reposar el asado durante 10 a 15 minutos antes de trincharlo. Retire los trozos de ajo. Si lo desea espese los jugos para preparar salsa. Disuelva la maicena en agua. Fije el control en HI (alta). Revuelva lentamente los jugos hasta que queden espesos. Rinde 6 a 8 porciones.

Frijoles horneados estilo Boston

4 tazas de frijoles blancos secos

12 tazas de agua

1 cucharadita de sal

1 cebolla grande picada

1/2 libra de cerdo salado, cortado en cubos de 1 pulgada 1/3 taza de melaza

3/4 taza de ketchup

3/4 taza de azúcar rubio

1 cucharada de mostaza seca

Tiempo de cocción: LO (baja) = 15 a 18 horas

1.Enjuague y separe los frijoles. Coloque en la olla cerámica los frijoles, el agua, la sal, la cebolla y el cerdo salado. Coloque la olla en la base calentadora, tápela y cocine en LO (baja) durante 13 a 15 horas o durante la noche hasta que los frijoles estén blandos

2.Drene los frijoles, conservando 2 tazas de líquido. Vuelva a poner los frijoles en la olla cerámica. En un recipiente combine el líquido de los frijoles con el resto de los ingredientes. Vierta los frijoles y revuélvalos para mezclarlos bien. Tape la olla y cocine en LO (baja) durante 2 a 3 horas para mezclar los sabores. Rinde aproximadamente 3 cuartos de galón o 12 a 16 porciones.
