to establ ish and maintain a regul ar cleaning and mainte nance schedule. Use of the cleaning and mainten ance rem inder form loca ted in this manual is high ly recom mende d.
Acce ss to the inter nal comp onents, safety
swi tche s, filt ers , etc., are gai ned by opening the access door. A metal gre ase filt er and cha rco al filter are
loc ated immedia tely inside the hood acc ess door.
To help maintain the protecti ve fil m coa ting on pol ishe d stainl ess ste el, cle an the exterior of the cabine t with a clean er recommended for stainless steel surf ace s. Spra y the cle aning age nt on a clean cloth and wipe with the grain of the stainl ess steel.
NOTE : Nev er use hydrochloric acid (muriat ic acid) on sta inless steel.
ATTENTION
HOOD AND ROTISSERIE WILL NOT
OPERATE UNLESS FILTERS ARE IN PLACE.
CHARCOAL FILTER
The cha rcoal (odor and polluti on control filter) is loc ate d immed iate ly inside the hood acce ss door. The cha rcoal fil ter shou ld be ins pected for contam inants
on a regular bas is. Replaceme nt must be made at a minimum of

GREASE FILTERS &
METAL HOUS ING (PLENUM )
The metal grease filte r is loc ated immediately inside the hood. Cle aning frequency should be based on oven usage. Grease- lad en products such as red meat, poultr y, etc., require cle aning
fre quency of at least once a week. Remove the grease filte r by pulli ng it
straight out of the housing from the front acc ess. Pla ce the filte r in the dishwas her or was h separat ely by pla cing in hot, soapy water until all greas e and particle s have been removed. Rinse thoro ughly. Allo w the filter to air dry before reins talling.
Cle an the interior metal housing (plenum) wit h a damp clo th and any good commercial detergent or grease solve nt at the recommended strengt h. Avoid the use of abrasive cleaning compounds ,
