IABOUT:COOKING
SELECTING HEAT SETTINGS
•If a higher setting is used to begin a surfacecooking operation or to bring water to a boil, always reduce to a lowersetting once cooking begins or water comes to a boil.
•Forsmoothtop cooking, it is better to select a lower setting and increaseto a higherone later,if needed,
•Foodwill not cook faster at a settingthat is higherthan neededto maintaina gentle boil. The temperatureof the water is the same whether boilingvigorouslyor gently.
Factorsaffectingthe heat setting include:
•Type, flatness and size of the cookware,
•Quantityand type of food being cooked.
•Use of a lid (coveringpans speeds cooking and saves energy),
•Elementvoltage or voltage supply to your home.

CANNING INFORMATION
Acceptablewater bath or pressurecanners should not be oversizedand should haveflat bottoms.
When canners do not meet
these standards, cooking times
may be longerand the cooktop

On a smoothtop cooktop,the
canner bottom should not

must have a flat bottom.
When canning, usethe HIGHsetting just until the water comes to a boil or pressure is reached in the canner, then reduce to the lowest heat setting that maintainsthe
boil or pressure. If the heat setting is not turned down,
damage to the cooktopmay occur. _._ | _, | |
