•For better browning,large panssuch as cookiesheets, or rectangularbaking pans should be placed /engthwise, front to back, on the rack. This centers the food in front of the convectionfan for better air circulation which gives betteroverall browning.
•Cookie sheets should be without sides and made of shiny aluminum. The bestsize to usefor cookie sheetsand jelly roll pans is 151hx
