3.10FGP55 Boil or Simmer Mode Options
In the Simmer Mode, the vessel temperature is maintained at the setpoint programmed by the operator. In the Boil Mode, the vessel temperature is raised to 212°F (100°C).
Select the Simmer Mode by pressing the (R) button. If the temperature of the vessel is above the setpoint,
be displayed. If the temperature is within 11°F (6°C) of the setpoint, (four dashes) will be displayed.
The Boil Mode is selected by pressing the (L) button. The computer will display and the temperature of the vessel will be raised to 212°F (100°C).

3.11 FGP55 Clock Display Options
The computer can be programmed to display rethermalizing time in minutes and seconds, or in hours and minutes, depending on the product being rethermalized.
To toggle between display options, press the switch, enter 1 6 5 3, then press the . To determine which display is active, initiate a rethermalizing cycle by pressing a product button. If the display is set to minutes and seconds, the time will immediately begin to count down. If it does not, the display is set to hours and minutes.
