FILLING THE FILTER

USING GROUND COFFEE

IMPORTANT: DO NOT OVERFILL THE FILTER AND MAKE SURE YOU CLEAN THE RIM OF THE FILTER TO REMOVE EXCESS COFFEE. STRAY GRAINS AROUND THE RIM WILL COMPROMISE THE SEAL BETWEEN FILTER HOLDER AND BREWHEAD AND MAY LEAK.

For best results grind your own beans in a Dualit coffee grinder. If you are using pre-ground beans ensure they are suitable for espresso machines.

1.Prepare the machine as shown on pages 16–17.

2.Select the appropriate sized filter (17), (18) or (19) depending on whether you are making one: espresso, a double or two singles. Make sure it's dry.

3. Snap it into place in the filter holder (7).

4.Using the measuring spoon (20), measure out one or two level spoons of coffee grounds into the filter.

5.With the other end of the measuring spoon, firm or 'tamp' the coffee grounds to compact the coffee. You are aiming for a uniformly and not too tightly packed filter. To ensure even extraction from both nozzles the surface of the coffee must be tamped level.

BARISTA TIP: Baristas often twist the tamper gently once they have compacted the coffee grounds. This has the effect of 'polishing' the top of the coffee and enhances the flavour of the espresso.
