Programming Modes
The meatprobe takesthe guesswork out
of roasting by cookingfoods to theideal
internaltemperature. Theprobe settingis
used to automatically turn the oven off
when meat reaches its optimal internal
temperature. Your Viking oven’s built-in
probewill helpyou preparemeats exactly
asyou want them.
MeatProbe Use andCare
• Use of probesother thanthe one providedwith youroven
mayresult in damageto the probe.
• Use the handlesof the probeand plug wheninsertingand
removingthemfrom the meatand outlet.
• Toavoid damagingyour probe,never use tongsto pull on the
cablewhen removing.
• Toavoid breakingthe probe,make sure foodis completely
defrosted beforeinserting.
• Toprevent possibleburns,do not unplug theprobe fromthe
outletuntil theoven has cooled.
• Never leavethe probeinside the ovenduring a self-cleaning
cycle.
• Never storethe probeinside the oven.
ToInsert the MeatProbe:
Afterpreparingthe meat andplacing it on thebroiler pan,follow
thesesteps forproper probeplacement:
1.Lay the probeon the outsideof the meat alongthe top or
sideand use yourfinger to markwhere the edgeof the meat
meetsthe probe.The point wherethey meetshould restin
thecenter of thethickest, meatiestpartof the roast.
2.Insert the probecompletelyinto the meat.It shouldnot touch
thebone, fat, orgristle.
• Forroastswith no bone,insert theprobe into themeatiest
partof the roast.
• Forbone-inham or lamb,insert the probeinto thecenter
ofthe lowest largemuscle or joint.
• Witha wholeturkey,insert theprobe into themeatiest part
ofthe inner thighfrom below andparallel tothe leg.

Usethis functionto simplifyroasting byautomaticallysearingthe
outsideof roasts.To useAuto Roast:
1.Arrange the ovenracks in thedesired positionsbeforeheating
theoven.
2.Select “UPPEROVEN” or “LOWEROVEN.”
3.Set the Oven FunctionSelectorto “AUTO ROAST.”
Temperaturedisplayflashes a presettemperature of325º F.
4.Set the temperatureusingone of the followingtwo methods:
a. Confirmpresettemperature,press“SET” or
“ENTER.”The ovenwill beginTruConvec™Preheat
immediately.
OR
b. Changethe temperatureby typing the desired
temperatureon the numerickeypad or usingthe up
anddown arrow keys.Press “SET”or “ENTER”when
finished. Theoven will beginTruConvec™Preheat
immediately.
DuringAuto RoastPreheat
Thedisplay willalternate betweenshowingthe set roasting
temperatureand the actualpreheat temperatureevery 5 seconds.
WhenSet Auto RoastTemperature IsReached
Onelong beep willsound and thedisplay willshow “SEARING.”
Theoven will remainat searingtemperature(set temperatureplus
100ºF) for 30 minutes.If set, theCook Time timerwill begin.
ToTurn OffOven:
Pressthe “OFF”button on the controlpaneldisplay forthe oven
youare using. Onebeep will soundand the ovenwill turn off.
