Broiling Tips
Alwaysuse a broilerpan and grid forbroiling.They are
designedto providedrainageof excess liquidand fat away
fromthe cookingsurface to helppreventsplatter,smoke, and
fire.
Tokeep meat fromcurling, slitfatty edges.
Brushchicken and fishwith butterseveral timesas they broilto
preventdryingout.
Toprevent sticking,lightlygreasebroiler tray.
Broilon first side forslightly morethan halfthe recommended
time,season,and then turn. Seasonthe secondside just before
removingfromthe oven.
Alwayspull the rackout to “STOP” positionbeforeturning or
removingfood.
Use tongsor a spatulato turn meats. Neverpiercemeat with a
fork,as this allowsthe juicesto escape.
Removethe broilerpan from the ovenwhen you removethe
food.Otherwise,drippingswill bake ontothe pan.
Whilethe pan is hot,place a damp papertowel overthe
grid.Drizzlewith liquid dishwashingdetergentand pour
waterover the grid.This willmake cleaningeasier.
Youcan also linethe broilerpan with aluminumfoil to
makecleaningeasier.Be sure the foilextends up the
sideof the pan.
• Althoughit isn’trecommended,the gridcan also be covered
withfoil. Be sureto slit openingsto conformwith the openings
inthe grid so thatmelted fat candrain through.This will prevent
spattering,smoking, orthe possibilityof greasefire.
