2 tablespoons unsalted butter plus extra to prepare cake pan

13 cup unbleached, all-purpose flour, plus extra to prepare cake pan

8ounces bittersweet chocolate

9large eggs

2 large egg whites

114 cups granulated sugar

Preheat oven to 350°F on convection bake with the rack placed in position 1 (bottom position).
