Theconstantly recireulating heated air in the convection oven strips
awaythe layer of cooler air that surrounds food. Consequently, many
foods cook morequickly.Distributed heat makes multiplerack
cooking possible.Convectionroastedmeatsretaintheir natural flavor
andjuiciness with less shrinkage than radiant bakeroasting.
