General Baking Recomendations

• Whencookingfoodsforthefirsttimeinyournewoven,userecipecooking
timesandtemperaturesasa guide.
Usetestedrecipesfromreliable sources.
Preheatthe oven only when necessary.For baked foods that rise and
forricherbrowning,a preheatedovenisbetter.Casserolescanbestarted
ina cold oven. Preheatingtakesfrom5 to 9 minutes;placefood in oven
afterOVEN INDICATOR LIGHT cyclesoff.
Arrangeovenracks beforeturningonoven.Followsuggestedrackposi-
tionson page19 and in thevariousbakingcharts.
Allow about 1 to 1½inches ofspacebetweentheoven side walls and
pansto allowproperair circulation.
Whenbakingfoodsinmorethanonepan, placethemonoppositecorners
of the rack. Stagger pans when baking ontwo racksso that one pan
doesnotshieldanotherunlessshielding is intended.(Seeabovephoto.)
To conserveenergy,avoidfrequentor prolongeddooropenings.At the
endofcooking,turnovenoff beforeremovingfood.

Dull,dark,enameled or glasspanswill generallyproducea brown,crisp
crust.Shinymetalpansproducea light, goldencrust.
Frozenpiesin shinyaluminum pansshouldbebakedon a cookiesheet
onrack2or be removedtoa dullorglass pan.
