Cortar en pequeños dados una rodaja de jamón espesa de 1/2 cm. Rallar 100 g de Comté o de Beaufort. En una sartén, derretir una nuez de mantequilla en 2 cucharadas de aceite y dorar el valor de una taza de pequeños cuscurrones de pan. Mezclar el jamón, el queso y cuscurrones a la masa.

Como variante puede remplazar el queso y el jamón por champiñones.

Los Crapiaux

Cortar finamente 1 cebolla grande y derretirla con 1 nuez de mantequilla. Cortar una rodaja de jamón serrano en pequeños cubos. Mezclar jamón y cebolla a la masa.
