Poached fish fillets

4Orange Roughy fillets (1 to 1% pound) M cup dry white wine

3 tablespoon butter, or margarine cut into X-inch slices

2 tablespoons finely chopped green onion l/4 teaspoon ground black pepper

Baked whtteflsh meuntere

l/i cup butter or margarine, cut into pieces Vi cup finely chopped parsety

1 tablespoon lemon juice

1W to 2% pounds whole whitefish, cleaned

1.Arrange fillets with thicker parts to the outside in a 2quart microwavable baking dish. Pour wine over fillets. Dot with butter. Sprinkle with onion and pepper.

2.cook covered with wax paper 3% to 5’12 minutes at HIGH power or until fish flakes easily when tested wilh fork. Let stand covered 5 minutes.

Makes 4 servings

1.Combine butter, parsley and lemon juice in a ll%quart microwavable baking dish. Cook uncovered 1 to 2 minutes at HIGH power or until butter is melted; stir once.

2.Place fish in baking dish and turn to coat with butter mixture. Cover with plastic wrap; vent. Cook 10 to 11 minutes at Cook Power 7 or until fish flakes easily when tested with fork; turn fish over after 5 minutes cooking. Let stand covered 5 minutes.

Makes 3 to 4 servings
