Cooked fruit yoghurts

JAM YOGHURTS

1 litre of whole milk, 1 natural yoghurt or 1 packet of starter culture, 4 tablespoons of jam which is not too thick and which contains small berries or pieces of fruit: cranberries, blueberries, rhubarb, ginger, strawberry, marmalade.

Whip the jam with a little milk. Add the yoghurt or the starter culture. Mix well then add the rest of the milk.

Pour the mixture into the pots and place them in the yoghurt maker choosing your preferred programme (8, 10 or 12 hours).

Other options: if you want to make yoghurt with two layers, simply place the jam at the bottom of the pots. Then carefully add the milk/yoghurt or milk/starter culture mixture into the pots. Put them in the yoghurt maker choosing your preferred programme (8, 10 or 12 hours).

VANILLA YOGHURTS

70 cl whole milk, 20 g powdered semi-skimmed milk, 1 natural yoghurt or 1 sachet of starter culture, 80 g sugar, 30 cl liquid cream, 1 vanilla pod.

Warm the cream then add the vanilla and sugar. Mix well so that the sugar melts and the vanilla seeds are well distributed. Set aside. Mix the yoghurt (or the starter culture) with the milk, which is added gradually. Pour the cream into the milk/yoghurt or milk/starter culture while constantly mixing, then add the powdered milk. Pour this mixture into the pots and place in the yoghurt maker choosing your preferred programme (8, 10 or 12 hours).
