Vegetable Napoleon

This vegetable side dish makes a beautiful presentation and

will be sure to impress any crowd..

1medium eggplant*

1medium zucchini

1medium onion

8medium baby portobello mushrooms

2medium tomatoes, ripe but firm

¹∕³

cup extra virgin olive oil

1teaspoon kosher salt

½teaspoon freshly ground black pepper

8large basil leaves

3ounces soft goat cheese

Makes 8 servings

Approximate preparation time: 20 minutes.

Preheat the Cuisinart® Griddler® in the open position to High.

Insert the slicing disc, adjusted to 6mm, into the large work bowl of the Cuisinart® Food Processor. Slice the eggplant, zucchini, onion, mushrooms and tomatoes into rounds.

Toss vegetables with the olive oil, salt and pepper.

Arrange the eggplant, zucchini and onions evenly spaced on both sides of the preheated Griddler®. Grill 2 to 4 minutes per side. Add the mushrooms; grill about 1 minute per side. Reserve grilled vegetables on

a platter and reduce the heat to Low. Grill the tomatoes, about 30 seconds per side.

On either a platter or eight individual plates, build the Napoleons in the following order: eggplant, onion, basil, goat cheese, tomato, mushroom, zucchini, finishing with another eggplant round.

*Try to select a medium-size eggplant that fits the feed tube.
