Precaliente la freidora a 375” F /190” C

Corte en piezas de tamaño uniforme para servir:

l-l/2 Ib%/ 680 gr. de filete de lenguado cúbrala con la Mezcla para Freír Pescado (receta en sección de Frituras)

Corte en tiras uniformes, ligeramente más grandes que papas fritas: l-l/2 Ibs. / 680 gr. de papas para hornear maduras.

Remoje en agua fría por 1/2 hora. Escurra y seque bien. Fría en aceite caliente hasta que estén doradas. Sáquelas, escurra y manténgalas calientes. Sumerja en el aceite el pescado empanizado hasta que el exterior esté dorado. Coloque el pescado y las papas fritas en un plato y sirva como dip: vinagre de manzana..

Las frituras deben cocinarse de 3 a 7 minutos, dependiendo del tamaño de la pieza

CHURROS(FRITURAS)

12.25 02/350 gr. de harina

2huevos

3tazas de agua (750 ml.)

Sal

Aceite de oliva o de maíz Azúcar

Coloque aguay sal en una cacerola y hierva. Agregue toda el harina al mismo tiempo y mezcle vigorosamente con una cuchara de madera. Coloque la masa en un tazón para mezclar. Mezcle los huevos uno por uno, usando su Batidora Osterl hasta que se empiecen a formar burbujas. Caliente el aceite en la Freidora. Usando una máquina para churros, coloque la masa y empiece a formar los churros. Fría los churros en el aceite hasta que esté de un color dorado oscuro. Sáquelos de la Freidora permita que escurran el aceite sobre las toallas de papel para remover el exceso de aceite. Espolvoree mucha azúcar sobre los churros.

MEZCLA.PARA.FREíR.VEGETALES,CARNES.Y.PESCADOS

Coloque en un tazón y mezcle bien:

1 cucharada de mantequilla derretida o aceite para cocinar

1 cucharada

de

sal

2 yemas de huevo batidas

1/4

cucharadita

de pimienta

 

Agregue gradualmente, revolviendo

constantemente;

3/4 taza de levadura de cerveza

Permita que la mezcla permanezca cubierta en el refrigerador por 3 ó 12 horas. Antes de usarla agregue 2 yemas de huevo batidas a punto de turrón

Uniendo la Mezcla

Mezcle:

1 taza de harina, pan finamente rallado y tamizado o hojuelas de maíz finamente molido 1 cucharadita de sal

1/4 cucharadita de pimienta o 1/4 de cucharadita de pimentón
