Cool nuts completely and break apart any that stick together; store nuts in an airtight container.

Return oil to temperature before repeating process with remaining nuts.

With fryer lid closed, lower empty fryer basket into oil and quickly bring back to highest position. Using a metal slotted spoon, add about half of the nuts to the basket; close lid and lower filled basket into oil. Fry 2 – 3 minutes until golden brown. Remove to baking pan.

Pour oil into deep fryer. Set fryer temperature to 365°F/185°C. Set an unlined 15 x 10 x 1-inch baking pan next to the fryer.

In a medium bowl, stir together ginger, cinnamon and red pepper. Add pecans and toss well to coat.

In a medium saucepan, stir water, sugar and honey. Bring to a boil and boil 1 minute. Reduce heat to low, add pecans and cook about 20 minutes until most of liquid has evaporated (do not let all the liquid evaporate).

PACANES ÉPICÉES

500 G DE NOIX

250 mL d’eau (1 tasse) 125 mL de sucre (1/2 de tasse) 30 mL de miel (2 c. à soupe) 500 g de pacanes entières (1 lb) 10 mL de gingembre en poudre (2 c. à thé) 5 mL de cannelle en poudre (1 c. à thé) 1 mL de piment de Cayenne (1/4 de c. à thé) 1,5 L d’huile d’arachide (6 tasses)

Dans une casserole de taille moyenne, mélanger l’eau, le sucre et le

miel. Faire bouillir 1 minute. Réduire le feu au minimum, ajouter les pacanes et faire cuire une vingtaine de minutes afin de réduire le liquide (il ne doit pas s’évaporer totalement).

Dans un saladier, mélanger le gingembre, la cannelle et le piment

de Cayenne. Incorporer les pacanes au mélange et bien les enrober.

Verser l’huile dans la friteuse. Régler la température à 365 ºF ou

180 ºC. Placer un plat allant au four de 38 x 25 x 2,5 cm (15 x 10 x 1 pouce) à côté de la friteuse.

Le couvercle de la friteuse étant fermé, plonger le panier dans

l’huile et le remonter rapidement en position haute. À l’aide d’une cuillère à égoutter, déposer la moitié des noix dans le panier, refermer le couvercle et plonger le panier dans l’huile. Faire dorer de 2 à 3 minutes. Déposer dans le plat.

Attendre que l’huile atteigne de nouveau la température

d’utilisation pour faire cuire le reste des noix.

Laisser les noix refroidir complètement et les séparer si elles collent

les unes aux autres; les ranger dans un contenant qui ferme hermétiquement.
