1libra (445 g) de salchicha* italiana de cerdo o pavo a granel

14 de taza (60 ml) de hojas de perejil ligeramente compactado

3onzas (85 g) de queso provolone o mozzarella

1berenjena mediana, pelada

2onzas (55 g) de queso parmesano

1taza (235 ml) de ricota

1 huevo

14 de cucharadita (1 ml) de pimienta negra

2tazas (475 ml) de salsa para espaguetis

Rociar un recipiente para hornear de 30.5 x 20.3 cm

(12 x 8 pulgadas) con aceite antiadherente en aerosol. Cocinar la salchicha a fuego moderado-alto en una sartén plana mediana hasta que esté bien cocida; escurrir. Dejar a un lado.

Colocar el tazón pequeño y la cuchilla pequeña en el tazón de trabajo. Con el procesador en funcionamiento, agregar el perejil a través del tubo de alimentación. Procesar hasta que esté finamente picado, de 8 a

10 segundos. Dejar a un lado.

Colocar el disco reversible para rebanar/rayar en el tazón de trabajo para rayar. Rayar el queso provolone. Dejar a un lado. Dar vuelta el disco para rebanar. Agregar

la berenjena cortada para que quepa en el tubo de alimentación. Procesar hasta que esté rebanada. Dejar a un lado.

Colocar la cuchilla multifunción en el tazón de trabajo. Con la máquina en funcionamiento, agregar el queso parmesano. Procesar para picarlo finamente, de 20 a

30 segundos. Agregar la ricota, el huevo y la pimienta. Procesar hasta que queden bien mezclados, de 20 a 30 segundos.

Extender 12 taza (120 ml) de la salsa para espaguetis sobre la base del recipiente para hornear. Cubrir con la mitad de la berenjena y la mitad de la salchicha. Untar con la mezcla de queso de ricota. Espolvorear con perejil. Cubrir con la berenjena, la salchicha y la salsa restantes. Hornear sin tapa a 350°F (180°C) durante 40 minutos. Espolvorear con el queso provolone. Hornear de 15 a

20 minutos más o hasta que el queso esté derretido y la berenjena esté tierna.
