11tazas de pan sourdough, francés u otro pan para focaccia (cortado en cubos de 1/2 pulgada /1.25 cm.)

1/2 taza (125 ml) de manteca o margarina, derretida

1/3 taza (75 ml) de aceite de oliva,

2 cucharadas de

(30 ml) manteca o margarina

1/3 taza (75 ml) de cebolla escalonia

12onzas (340 g) de hongos*, cortados en cuatro

12onzas (340 g) de salchichón

1manzana mediana, sin cáscara ni corazón y cortada

1/2 taza (125 ml) de nueces o castañas, tostadas, cortadas en pedazos grandes

1/3 taza (75 ml) de hojas de perejil fresco cortadas

1/3 taza (75 ml) de hojas de salvia frescas cortadas

2cucharaditas (10 ml) de hojas de tomillo frescas

1/2 cucharadita (2 ml) de sal

1/2 cucharadita (2 ml) de pimienta negra

21/2 tazas (625 ml) de caldo de gallina

1 huevo, revuelto

En un recipiente bastante grande, mezclar el pan,

1/2 taza (125 ml) de manteca y aceite de oliva; sacudir para cubrir en forma pareja. Esparcir en una placa para horno. Hornear a 300 °F (150 °C) de 1 a 11/2 hora o hasta que esté seco, revolviendo de vez en cuando. Dejar enfriar completamente.

Colocar los cubos de pan en el recipiente de cerámica de la Slow Cooker rociado con aerosol de cocina antiadherente. En una sartén mediana, derretir a fuego medio-alto 2 cucharadas (30 ml) de manteca. Agregar la cebolla escalonia; cocinar y revolver 2 minutos. Agregar los hongos; cocinar 2 minutos, revolviendo de vez en cuando. Agregar los hongos a la mezcla del pan. En la misma sartén, a fuego medio-alto, cocinar el salchichón hasta que deje de tener color rosado; revolver con frecuencia. Escurrir. Agregar el salchichón, la manzana, las nueces, el perejil, la salvia, el tomillo, sal y pimienta a la mezcla del pan. Mezclar bien. En un recipiente grande, mezclar el caldo y el huevo. Verter sobre la mezcla del pan, revolver bien hasta que el líquido se absorba. Tapar y cocinar en COCCIÓN LENTA (SIMMER) de 5 a 6 horas o hasta que la temperatura sea de por lo menos 175 °F (80 °C). Revolver antes de servir.

Rinde: 18 porciones (1/2 taza [125 ml] por porción).

*Sustituir 31/2 onzas (100 g) de hongos shiitake cortados en pedazos grandes por 4 onzas (115 g) de hongos tipo ombligo, si lo desea.

Consejo: el pan de textura firme es mejor para esta receta; usar un surtido de su pan preferido para textura y sabor interesante. El pan se puede tostar con 1

día de antelación; guardar en un recipiente sin tapar completamente en lugar fresco y seco.
