INTRODUCTION

Steam Cooking
Convection cooking in pressure-less steami ng
compartments will steam cook fresh foods or will
steam defrost and cook frozen foods prov iding the
maximum color, flavor and nutriti onal value with the
least expenditure of energy and labor. The pressure-
less steaming compartments on the VHX series
allows the operator to open and close the door,
anytime during a cooking cycle. The steam supply
will shut off when the door is opened, then re-start
when the door is closed.

Model Designations
Boiler Code Descriptions
Vulcan-Hart incorporates redundant control s in
compliance with the CSD-1 control s and saf et y
devices for boiler construc t ion on these High
Efficiency Steam models. A Description of the c ode
is listed below.
CSD-1 Construction - Redundant controls in the
electrical safety cir c uits that, if tripped, m ust
manually be reset after the condi tion causing the trip
subsides. These controls consist of - (1) dual
function water level c y c l ing and low level cut of f
control and (1) single function l ow water level cut-off
control (Aux LLCO) and a high pressure reli ef switch
in conjunction with a mechanical pressure relief
valve. Addit i onally, both circuits hav e individual
indicator lights for l ow water and hi gh pr essure that
will illuminate for a visual verification of the
shutdown mode.
CSD-1 construction requires operator interv ention in
the event of a shutdown. The indicat or lights show
the operator which safety system was shutdown.
