Convect Slow Roast

Convect Slow Roast is best for food items such as beef, poultry and pork. This cycle cooks food at low temperatures for long periods of time. Food can be cooked up to 12 hours. Depending on the time chosen, there is a range of temperatures to select. See the following chart.

7.(Optional) To keep food warm after a programmed cook timer ends, turn Keep Warm ON from the Cook Time screen. See the “Keep Warm™ Option” section for additional information.

8.(Optional) To set a delayed start, touch DELAY START from the Cook Time screen and set desired time. A second way to set a delay start is to touch DELAY START from the Temperature tab. See “Delay Start” section for additional information.

9.Touch START to begin cooking.

10.When the cycle is complete, touch CANCEL (CANCEL UPPER or CANCEL LOWER on double models) to turn off the oven.

Food should be completely thawed.

Cover foods to keep food moist.

Prior to Slow Roasting, meat can be pan seared or broiled on sides to enhance browning, flavor and tenderness.

Use rack position 2o for best results.

To Use Convect Slow Roast:

Before using Convect Slow Roast, see “Positioning Racks and Bakeware” section.

1.Place food in oven.

2.Touch MODES to move to the Modes menu.

3.From the Modes menu, touch CONVECT SLOW ROAST.

4.After touching Convect Slow Roast, you will move to the Temperature screen, or you may touch the Temperature tab to move to the Temperature screen.

Use the slider to enter a desired cooking temperature or press the -5°F (-1°C) or +5°F (+1°C) buttons. The temperature must be between 170°F (77°C) and 300°F (150°C). The temperature range you select from is based on the selected cook time.

5.Touch START to begin cooking.

6.If you want to set a different cook time, touch the tab labeled 04:00:00, 08:00:00 or 12:00:00 to enter the Cook Time screen.

Select 4 Hours, 8 Hours or 12 Hours.

True Convect is best for baking 1, 2 or 3 racks of baked goods such as biscuits and cookies. It can also be used for up to 2 racks layer cakes. During preheat the convect, bake and broil elements cycle to heat the oven. After preheat, only the convect elements and fans cycle on and off to maintain oven temperature.

NOTE: Reduce recipe temperature by 25°F (14°C) for this function.

Before using True Convect, see the “Positioning Racks and Bakeware” section and the following tips for rack positions.

NOTE: An “o” after the rack position number indicates that the offset rack should be used. An “f” indicates that the flat rack should be used, and an “r” indicates that the roll-out rack should be used.

Rack positions

1-rack baking: 3f

2-rack baking: 2o and 3r

3-rack baking: 1o, 3f or 5r

For best results when baking cakes on 2 racks, use racks 2o and 4f for baking. Place the cakes on the racks as shown.
